Green Curry Rice | Itaki Pro Electric Lunch Box
Green curry rice is a classic Thai dish consisting of chicken and the eggplants. This is a recipe that I love to make on those days I don’t have much energy left in me. It is pretty easy to make using curry paste which can be bought from most supermarkets. It is easy and convenient as you only need about 15 minutes to get everything ready. With less than 30 minutes cook time, you get lunch on the table in a jif.
I prefer to prepare this curry with chicken but feel free to substitute the chicken with beef, pork or tofu if you like.
Green Curry Rice | Itaki Electric Lunch Box Recipe
This recipe uses the Itaki Pro to make a delicious green curry rice.. Prepare the Itaki the night before and bring it to work (remember to keep it in the refrigerator till ready to cook). Plug the Itaki in one hour before lunch and you will have a hot and delicious meal waiting for you.
Ingredients
- 100 gm - Eggplant
- 150 gm - Chicken thigh or breast
- A few drops of oil
- 2 tbsp - Green curry paste
- 2 tbsp - Green peas
- 3/4 cups - Coconut milk
- 1/3 cup - Rice
- 1/3 cup - water (itaki)
- 1/3 cup - water (rice)
Instructions
- Cut the eggplant into cubes.
- Cut chicken thigh into bite sized pieces.
- Sprinkle a few drops of oil at the bottom of the metal bowl.
- Place the eggplant at the bottom and coat with the oil.
- Add the chicken.
- Add the green curry paste.
- Add the green peas.
- Add the coconut milk.
- Add rice that has been washed and drained to the upper tray.
- Cover with the plastic cover and keep in the fridge is not cooking immediately.
- One hours before meal, add 1/3 cup of water to the base of the itaki.
- Place metal bowl on the itaki and remove plastic cover.
- Add 1/3 cup of water to the rice. Try to level the rice for even cooking.
- Close the lid tightly and turn the power on.
- Wait for 30 to 40 minutes and food is cooked.
- Open the lid carefully to avoid the hot steam.
- Stir the curry to mix and coat all ingredients.
- Green curry rice is ready. Enjoy!
Notes
- Only coconut milk is added to curry paste. No water needed.
