Keto Miso Ramen | HotLogic Mini Electric Lunch Box Recipe
Keto miso ramen makes use of zucchini as the noodle (commonly known as zoodles) to cut down on the carbohydrate. This miso ramen is nutritious as the addition of 2 eggs with runny egg yolks gives a punch to it’s nutrition value. The miso broth gives it the yummy flavor we all enjoy in a typical ramen.

Are you following the keto diet but missing ramen? Here comes zucchini to the rescue. We are using zoodles (zucchini noodles) as a replacement for ramen to bring the carb level down. The net carb for this dish is only 6.61g. The miso give this dish a nice flavor and tasted great. The fat content for this dish is on the low side to be on keto. So I ate this with an avocado on the side. Hope you enjoy this recipe.
Ingredients
- 150g - chicken thigh
- 80g - zoodles
- 30g - shiitake mushroom
- 2 - eggs
- 1 Tbsp - white miso
- salt & pepper (to taste)
- 1 tsp - sesame oil
- 1 cup - water
Instructions
- Cut chicken thigh into bite sized pieces.
- Spiralize zucchini to make zoodles.
- Place chicken in glass container and season with salt & pepper.
- Add sesame oil to the chicken. Stir to mix.
- Add sliced shiitake mushrooms.
- Place zoodles on top of the mushrooms. Leave 2 corners of dish empty.
- Add the 2 eggs to the empty corners.
- Add the white miso paste on top of the zoodles. Try to spread it out.
- Cover the glass container and keep in the fridge till ready to cook.
- 2 hours before meal time, add 1 cup of water to the glass container.
- Place container into the HotLogic Mini. Plug in the power cord and cook for 2 hours.
- Food is ready after 2 hours. Enjoy!
Notes
- Eggs might be a little on the runny side after 2 hours. Cook longer if you prefer your eggs to be more cooked.
- Zucchini can be replaced with other spiralized vegetables.
