'Claypot' Chicken Rice | Itaki Pro Electric Lunch Box Recipe
How about making claypot rice without a claypot? This recipe uses the itaki lunch box to cook claypot rice all in one go. Not only does it taste absolutely delicious, it is as simple as layering all the ingredients in the metal bowl. The itaki does all the hard work for you. Imagine having hot, steamy, freshly made claypot rice in the office. Your colleagues will be envious of you. You can prep the ingredients ahead of time and bring it to you to the office. Just remember to keep the raw ingredients in the fridge until ready to cook. Enjoy!
Ingredients
- 100g - napa cabbage
- 2 pieces - dried mushroom (re-hydrated)
- 1 piece - Chinese sausage
- 150g - chicken thigh
- 1/3 cup - rice
- 50g - shredded carrots
- 1/3 cup - water (itaki)
- 1/4 cup - water (rice)
Marinade
- 1 Tbsp - soy sauce
- 1/2 Tbsp - dark soy sauce
- 1/2 - Tbsp - sweet soy sauce
- 1 tsp - sesame oil
Instructions
- Cut napa cabbage stems into small pieces. Cut leaves into bigger pieces.
- Cut re-hydrated shiitake mushrooms into strips.
- Cut Chinese sausage into slices.
- Marinate chicken thigh with soy sauce, dark soy sauce, sweet soy sauce and sesame oil.
- Prepare the itaki. Add uncooked rice to the bottom of the metal bowl. Spread out the rice.
- Add carrots, napa stems, mushrooms, followed by chicken in this order. Add all the sauce from the chicken marinade.
- Add sliced sausages followed by napa leaves oin top.
- Cover and keep in the fridge if not cooking immediately.
- 1 hour before meal time, add 1/3 cup of water to the hotplate aread of the itaki.
- Place the metal bowl on to itaki and add 1/4 cup of water to the rice.
- Turn on the itaki and wait for 30 minutes for food to cook.
- Rice is cooked in 30 minutes, Stir and enjoy!
Notes
- The marinade for the chicken is also the sauce for the rice. Remember to add all in.
- Add any type of vegetables that you like.
