Japanese Curry Rice | Itaki Pro Electric Lunch Box Recipe
Japanese curry usually features chicken, beef, or shrimp and is typically served over rice. This recipe showcases this most popular type of Japanese curry with chicken with the use of readily available curry paste. This type of curry paste is convenient and can be found easily in most supermarkets. The chicken and curry are then boiled together until the chicken is cooked through and tender. The curry paste create a thick curry when stirred with the ingredients to produce a mouth watering taste. Choose chicken thighs instead of breasts because they are not as fatty hence not as flavorful.
Japanese Curry Rice
Make Japanese curry with rice in the comfort of your office chair. This recipe uses the Itaki Pro for a quick and easy freshly made lunch. Prepare the Itaki the night before and bring it to work (remember to keep it in the refrigerator till ready to cook). Plug the Itaki in one hour before lunch and you will have a hot and delicious meal waiting for you.
Ingredients
- 150 gm - chicken thigh or breast
- 100 gm - potato
- 100 gm - sweet Potato
- 1 cube - Japanese curry paste
- 1/3 cup - rice
- 1/3 cup - water (itaki)
- 1/3 cup - water (curry)
- 1/3 cup - water (rice)
Instructions
- Cut the chicken thigh into bite sized pieces.
- Peel and cut the potato into smaller cubes.
- Peel and cut the sweet potato into bite sized cubes.
- Layer the ingredients into the itaki metal bowl.
- Please the potatoes at the bottom.
- Add the curry paste cube.
- Add the chicken next.
- Finally add the sweet potato.
- Place uncooked rice in the metal upper tray.
- If you are not cooking immediately, cover with the plastic cover and keep in the fridge.
- One hour before eating time, add a 1/3 cup of water to the base of the itaki pro.
- Place the metal bowls in the itaki.
- Remove the plastic cover and add 1/3 cup of water to the big metal bowl containing the curry.
- Add another 1/3 cup of water to the upper tray containing the rice.
- Close the lid of the itaki pro tightly and plug in the power cord.
- Turn on the itaki and wait 30 to 40 minutes for food to cook.
- When the power light is off, open the lid carefully in order to not get burnt by the hot steam.
- Stir the curry paste with the chicken, potato and sweet potato.
- Japanese curry rice is ready to be enjoyed.
Notes
- The curry sauce thickens up when you break up the paste and stir it together with all the ingredients.
- Replace sweet potato with pumpkin if you like.
